Inevitably, there’s always leftovers from Thanksgiving dinner, and with some of the leftover stuffing and turkey here at our house, I’m planning on making turkey and stuffing cakes.
You know you’re jealous; admit it.

As in fried stuffing like pancakes? That’s a new one. Sounds interesting. What else goes in it?
I’m having hot turkey and gravy on Wonder bread. There’s something about using Wonder bread…it sticks to the roof of your mouth. Jealous?
Well, it’s not like a pancake; it’s more like a crab cake. I use chopped turkey meat mixed with stuffing, then I put some olive oil (just a little bit) into a pan with some butter. I fry the cakes on each side until they’re nicely browned, then they could be served with either gravy or cranberry relish, depending on which you prefer.
Interesting. I like hearing what other people come up with.
We gave most of our leftovers to a retiree on a fixed income and a single mother working her way through school and her two year old boy.
We kept enough turkey for my lunch and enough stuffing to appease my wife’s carboholism.
Feeling jealous? Or even guilty?
I don’t feel jealous or guilty. We gave a good amount of turkey, stuffing, and all the other fixins to my retired grandparents and my mother, but we still had plenty left over.
Good man, Zach.
I would’ve like to have had more leftovers, but they needed the help more than we did. Next year, I think I’m going to buy an emu instead of a turkey.
I don’t know about buying an emu; a turkey’s more than enough.
